Well happy Wednesday everyone! I hope you are all having a good week, and to get you over the hump I have a new recipe for you: Pi a Colada Oatmeal! I was actually quite proud of myself for coming up with this one. I had bought some frozen pineapple from Trader Joe's last week and I always add coconut oil to my oats, so somehow I put two and two together and BAM! It was a winner!

Pi a Colada Oatmeal: Ingredients: 1/3-1/2 cup oatmeal 1/3-1/2 cup milk of choice 1/2 cup water 1 egg 1 packet Stevia 1 tsp vanilla 1/4 cup pineapple chunks, chopped 1/2 banana, sliced 1/2 T coconut oil (topping) 1 T almond butter (topping) 1-2 T shredded coconut (topping) Directions: First, place all dry ingredients in a small sauce pan. Add water, milk and vanilla, turn on heat and allow to simmer. Mix in pineapple and banana. Stir occasionally. Once the oatmeal is near cooked, add your egg (or egg whites, or protein powder) and stir to make sure the egg is mixed in. Allow to cook a minute or two longer until oatmeal reaches desired consistency. Top with shredded coconut, coconut oil and almond butter!

And here it is all packed up and brought to work! Not quite as pretty as my nice bowl and wood table
